Jaggery (locally known as Gur) is a traditional, unrefined whole cane sugar. It is made by boiling and concentrating sugarcane juice (or palm sap) without separating the nutrient-rich molasses. Ranging from golden to dark brown, it serves as a nutrient-dense alternative to refined white sugar.
